I think? I think it’s Saturday? Sunday? Maybe July? I don’t know …
I busted out! I haven’t been in a restaurant since Jake’s in Florida (that’s 40 days, but who’s counting??!). Cancun’s might be my PLACE when this is all over!
We sent the weekend cleaning up, deweeding, cutting and trimming, plotting, planning, and planting! Carter’s little garden area is about finished. She’s got tomatoes, peppers, and cilantro for homemade salsa, a strawberry potter plant and raspberries (hoping to expand to a mini-orchard!)
And we ended the weekend with tacos and street corn, smoothies (for the kids) and boozies (for me), a fire and hot tubbing. Man, life is rough, huh?!
We begin Homeschooling Phase 2 today, on the heels of Friday’s news of a full closure for the duration of the year. So we took the time to reflect on our first month, and we tweaked our coming month. Here’s to breaking up the mundane!
With the chilly weather, we opted for games during physical time!Exploding Kitties is so intense!

Diary Time: Carter: Monday Week Five Woke up early this morning and ate some Toaster Stroodles, while Charlie played his time. I earned some extra time for this afternoon, and it’s our first day on the new schedule! Instead of physical or outside time, we played Unstable Unicorns and Exploding Kittens. I sketched out Percy’s Brionne form and Patch’s initial design for creative time. I beat Windblight in my first session of Zelda gameplay, and now all that’s left is Ganon himself!
Charlie: Monday 4/20/2020 Today was the first day of having a new routine. And it is nice we get a chance to earn more video games. And we have a lot of free time outside of school. But I think the best part is when we have outside time on a cold day we play games. We played unstable unicorns and I won twice out of three times it was fun.
Kelly: Monday 4/20/2020 We started a different schedule today, knowing that we’re in this for the long haul. We’re starting our day at 8am, doing an hour of tech time, physical or game time (if it’s cold outside, which is always is!), an hour of creative time then an hour of learning time, and lunch. After lunch, it’s a little more tech time, reading, outside (or a game with everyone, if it’s too cold, which it always is!) and journaling. Everyone has the opportunity to earn extra tech time by completing chores or more school based work. They both seemed to be in a little better spirits throughout the day. Maybe the newness helped break up the routine?! We’re going to keep with our Late Start Wednesdays, sleeping in and then going to hike and explore secluded areas. And Fridays have been socializing and checking in with friends, which has been cool! Since it was so windy outside today, we played Exploding Kittens this morning. Carter was on pins and needles all game, worried and anxious she’d get the explosion card! And we played Unstable Unicorns most of the afternoon, with Charlie sneakily winning 2 of 3 games! So much to keep track of! I’m too old for this business!
Carter made dinner! Here’s her Beef & Broccoli recipe (amazing!): Ingredients for the marinade: 2/3 cup soy sauce, divided Juice of 1/2 lime 3 TBSP packed brown sugar, divided 2 TBSP cornstarch, divided Kosher salt & freshly ground black pepper 1 lb. sirloin steak, sliced thinly against grain 2 TBSP vegetable oil 3 cloves garlic, minced 1/3 cup beef broth 1 head broccoli, cut into florets
In a medium bowl, whisk 1/3 cup soy sauce, lime juice, 1
tablespoon brown sugar, and 1 tablespoon cornstarch until combined. Add
steak, season with salt and pepper, and toss until steak is coated.
Marinate 20 minutes.
In a large skillet over medium-high heat,
heat oil. Add steak in a single layer, working in batches if needed, and
cook until seared, about 2 minutes per side. Remove steak and set
Stir in garlic and cook until fragrant, about 1 minute.
Stir in remaining 1 tablespoon cornstarch until garlic is coated, then
stir in broth, remaining 2 tablespoons brown sugar, remaining 1/3
cup soy sauce, and Sriracha. Bring mixture to a simmer. Add broccoli and
simmer until tender, about 5 minutes. Season sauce with salt and pepper
(if necessary), then return steak to skillet.
We ran a “Box of Happiness” to Sam and to Mia, then we joined Miss Evie’s birthday drive by. On the way home, we grabbed Frosty’s and continued our Marvel Marathon!
Diary Time: Carter: Tuesday Week Five Woke up on time again, and I played first on the Switch, because I had another D&D session at 1:00. In the session we met two elements, who threatened us, and Alan. We also met a Rakshasa, who was disguised as a monk. I made beef and broccoli for dinner, and it was probably the best meal I’ve made so far.
Charlie: Tuesday 4/21/2020 I don’t remember what I did today.
Kelly: Tuesday 4/21/2020 Today was a sunshiny bust! We woke up to Pete having knocked over my cactus, and clean up needed. So I cleaned up while the kids did their electronics time, and since they were so nice to one another, and I was so distracted, I none of us realized it was nearly 10am! As a thank you for being awesome, and needing to run to the post office, I let them keep playing for half an hour while I mailed goodies to Owen and Makalya, Lincoln and Jameson, and Kelsey. We schooled for a bit: Carter practicing for show choir auditions Friday and Charlie and I working on fractions. After lunch, the kids asked to read (YES?!), and I planted and replanted a few flowers.
We spent the morning at Saylorville! We were careful with Carter’s sore ankle, but she was a trooper, and Charlie led us to the beach. We skipped and tossed rocks and soaked up the sunshine!
“Field Trip Wednesday” followed by Subway. Little measures to make Quarantine special!
Carter made dinner again! Also a total winner! Her Mac and Triple-Cheese! 3 cups uncooked elbow macaroni 1 package Velveeta, cubed 2 cups shredded Mexican cheese blend 2 cups shredded cheddar cheese 1 3/4 cups whole milk 1 can (12 ounces) evaporated milk 3/4 cup butter, melted 3 large eggs, lightly beaten Cook macaroni according to package directions for al dente; drain. Transfer to a greased 5-qt. slow cooker. Stir in remaining ingredients. Cook, covered, on low until a thermometer reads at least 160°, 2 to 2-1/2 hours, stirring once. We lost track of time, so she cooked macaroni according to the package, then added everything, slowly as we melted, into a pot.
Ending the day (beginning Thursday) with kitties!
Diary Time: Carter: Wednesday Week Five Woke up late, and rushed getting ready because I had half an hour before the day started. We went down to Saylorville again, and walked on the beach, and skipped rocks. Mom got us Subway for lunch again, and we ate outside on the porch! I cleaned/vacuumed out the car, before I could play a bit of Zelda.
Charlie: Wednesday 4/22/2020 Today we did not do creative time which I’m okay with. But we got more video game time. I got to play with my friends. I went to Owen’s house and we played soccer on the trampoline. And we made some jumping and diving catches. It was super fun and brutal. But it’s getting really boring and I’m running out of things to do. But we went to saylorville and we thought of some rocks in the lake. And that’s all we did mostly because of my sister’s bruised foot.
Kelly: Wednesday 4/22/2020 We broke out today! We soaked up the sunshine at Saylorville! We were able to take a pretty easy trail, Carter’s foot is still a little tender, from Cherry Glen to the beach. There, we skipped and tossed rocks into the lake. We hiked around a bit, seeing little to no other humans! Then we headed over the bridge, which Charlie loves! I’d swerve and holler (always under control!), and he’s beg to stop, with a smile! We headed back home and grabbed Subway (our Wednesday “tradition” during this chaos), and spent our afternoon outside. Carter and I planned her fruit trees; she wants to plant a couple cherry bushes and a peach tree and Charlie headed to Owen’s to socially distance hang out. The sunshine does amazing things, that’s for sure!

You know it’s a wonderful day when a really great water balloon fight with friends breaks out! Some great tosses and direct hits, and a few welts!
Carter planned a “Porch Party,” and invited the neighbors for pizza and drinks. Great plan, but Mother Nature had plans of her own. We watched the “small” cell move in and sprinkle on us. Then came a downpour, complete with the chill and hail! We took refuge on the porch as it passed!

Diary Time: Carter: Thursday Week Five I started another box of toaster stroodles today, and played some more Pokemon for my morning time. I need to practice my singing for the audition tomorrow, both the pop and German sections need work. I checked my art assignments, we’ve got a google meet tomorrow for good things at 11:30.
Charlie: Thursday 4/23/2020 Today I played games and ate a good special k red berries yum.
Kelly: Thursday 4/23/2020 We did tech time, creative time, and school time in the morning, then we spent a glorious day outside! We tried, and failed!, at Spikeball, but had fun regardless! Cara, Haley and Laura, and Bobbi and the boys ended up in the yard, and we hung out chatting while the kids played together Carter declared a water balloon battle, and the giggles rang through the neighborhood! It was heavenly! She also decided she wanted to host a “Porch Party,” so we ordered pizza and got the fire pit ready. Mother Nature, however, had different plans! Around 6pm, the rain came, and by 6:15pm, the temps had dropped 10 – 15 degrees and it was hailing! But we waited it out, and out came the rainbow and the fire pit! We roasted marshmallows and enjoyed a cool evening with neighborhood friends. Charlie said it was the best day of quarantine yet!

Diary Time: Carter: Friday Week Five I practiced some choir this morning for my audition, and submitted my final video this afternoon. Hopefully I get into Chaos, but PX will always be good. I played some Splatoon for game time, and it’s as hard as I remember it being. I’ve read on Wattpad for my time, and I drew some Pokemon gijinkas for background characters.
Kelly: Friday 4/24/2020 Today was boring! Maybe it’s the dreary day, or the lack of fun following an awesome Thursday, but nobody really had it in ‘em today. I cleaned window tracks and windows, and did about four loads of laundry. Carter completed her show choir audition (awesome!), and Charlie worked on creating a Kahoot! for his class to play next week. Yep, that’s about it!
